For starters the leaves provide an area for bio film to grow which is the shrimps number one favorite food. Shrimp are grazers and they are meant to graze constantly, the leaves will gradually break down and the shrimp will continue to graze on the leaves until just a skeleton remains.
The leaves release tannins which are beneficial for spawning, they also have antibacterial and anti-fungal properties. If you have snails, they will enjoy the leaves as well.
The leaves also lower PH and soften water.
